Egg-in-a-hole feels fancy but takes less than ten minutes. You need a slice of bread, a knob of butter, one fresh egg from Freshplug Organics, and a little salt and pepper. Cut a round hole in the bread using a small glass or cookie cutter, toast it in a hot pan with butter, then crack the egg straight into the middle.
Fresh eggs make all the difference. The whites hold together, the yolk stays bright and rich, and the taste is clean. Our hens are raised with care on our small organic farm, so their eggs taste like they mean it.
To make it, heat a pan over medium heat, melt a little butter, and place the bread in the pan. Toast for about a minute, then flip. Crack an egg into the hole, season with salt and pepper, and cover the pan for one or two minutes so the white sets while the yolk stays soft. Flip again if you like your egg cooked through, or serve it with a runny yolk for dipping the toast edges.
It’s great for a lazy weekend breakfast or a quick dinner when you want something warm and satisfying. Serve it with cooked greens or a slice of avocado for a simple, complete meal.
